
Viral Cucumber Salad
4 servings as a side dish
INGREDIENTS:
1 English cucumber, thinly sliced
1-2 green onions, finely sliced
1 clove of garlic, minced
1 tbsp and 1 tsp NIKIGO Original Sauce
½ teaspoon sugar
½-1 tsp perilla oil (optional) Perilla oil is an allergy-friendly alternative to sesame oil, popular in Korean cuisine
1-2 tsp amaranth seeds, popped Amaranth is a gluten-free pseudo-grain, that when popped has a toasty, nutty, popcorny taste – plus it’s fun to pop! Just put seeds into a medium-hot pan and stir or shake until popped, being careful not to burn.
Dash of chili flake
DIRECTIONS:
Thinly slice the cucumber, aim for ⅛th inch thick, add to lidded container. Add the remaining ingredients except the popped amaranth. Close the lid and shake. If adding popped amaranth, add after first shake and shake again. Enjoy a delicious cucumber salad!
