Nuoc Uop – Shallot-Garlic Marinade (Vietnam)
This easy-to-make marinade is a staple in Vietnamese cuisine. Use it to marinate meats, poultry, fish or vegetables, then grill.
INGREDIENTS
1 shallot, roughly chopped
3 garlic cloves, roughly chopped
2 tbsp NIKIGO Original Soy Free Sauce
1 tbsp brown sugar
¼ cup vegetable oil
DIRECTIONS
In a blender combine all the ingredients and blend until smooth. Makes enough marinade for between 1-2 lbs of meat. To marinate, add the meat and marinade to a zip type freezer bag and seal. Turn the bag over several times until well coated. Refrigerate for at least 4 hours, ideally overnight.
To cook, either grill the meat until done – it will develop nice caramelized bits – or broil on high, making sure to check the internal temperature to make sure it is done.
Traditionally this marinade is made with fish sauce, but our version is fish free. If you and your guests can eat fish sauce, you may substitute it for up to half the NIKIGO Sauce.
