Mezzi Rigatoni with General Tso’s Sauce
For when you are craving General Tso’s, the sweet and tangy Chinese-American classic, but you need it allergen-friendly, I love using Purefetta Mezzi Rigatoni as an alternative to tofu. “Mezzi” means half, meaning it’s half the length of regular rigatoni noodles, similar to cubed tofu, and has a great texture and shape to capture all the tasty sauce. A wonderful side dish all by itself, feel free to add in veggies and protein to bump it up to an entreé, just make more sauce.
Serves 2-4
INGREDIENTS:
1 cup Purefetta Mezzi Rigatoni Fresh Pasta (Top 9 Allergen Free and GF)
1 tsp oil (optional)
For the Sauce:
2-3 tbsp NIKIGO Original Soy Free Sauce
1-2 tbsp rice wine vinegar (depends how tangy you like it)
2 tbsp white sugar
2 tbsp of brown sugar
1 tbsp water
Sprinkle of crushed red pepper
Sliced green onion for garnish (optional)
DIRECTIONS:
Mix all the sauce ingredients together. Boil water, and cook the Purefetta pasta for 2 minutes. Drain. In a pan on medium heat, add a teaspoon of oil, add the drained Purefetta, then stir in the sauce. Cook around 1-3 minutes, until the sauce thickens and begins to evaporate and slightly caramelizes. Serve hot and garnish with sliced green onion.
